Cherry Recipes for Your RV

This is cherry month and what better way to celebrate is there than making chocolate covered cherries? This recipe is easy, and it’s great for taking with you when you take the RV out, since you should make them a week or two ahead of time. The longer you wait to eat them, the better they taste.

Chocolate Covered Cherries

  • 60 maraschino cherries, preferably with stems
  • 3 tbs. Butter, softened
  • 3 tbs. Corn syrup
  • 2 cups confectioners’ sugar, sifted
  • 1 pound chocolate confectioners’ coating

Instructions:

Drain the cherries and then set them on paper towels to dry.

Combine the butter and corn syrup in a medium bowl until the mixture is smooth. Stir in the confectioners’ sugar and knead the mixture until it forms a soft dough. If it’s not stiff enough to easily work with, chill it for a bit.

Wrap each cherry with about 1 teaspoon of the dough. Chill the covered cherries until the dough is firm.

Melt the confectioners’ coating in a heavy sauce pan over low heat. Dip each cherry in by it’s stem and then place the cherries on waxed paper lined sheets. Chill the cherries until they are completely set. Store them in an airtight container in a cool place. They are best after 1 to 2 weeks.

Chocolate Cherry Cobbler

  • 3 tbs. Butter, melted
  • 1 cup all-purpose flour
  • ¼ tsp. Salt
  • 1 tsp. Baking powder
  • ½ cup milk
  • 1 cup granulated sugar
  • 1 tbs. Cornstarch
  • 1 cup boiling water
  • 3 ½ cups fresh cherries, pitted
  • ¾ cup granulated sugar

Instructions:

Preheat the oven to 350 degrees Fahrenheit. Line a 9-inch square pan with foil, then lightly grease the foil.

Mix ¾ cup sugar, the butter, flour, salt, baking powder and milk together. Place the cherries in the bottom of a 9-inch square pan. Spread the dough over the cherries.

Combine 1 cup sugar and the cornstarch. Stir in the boiling water. Pour the mixture over the dough.

Bake the cobbler at 350 degrees Fahrenheit for 45 minutes. Serve warm.
